Deviled Egg Chicks
Hard boil eggs 9 minutes. Peel.
Slice bottom of egg to make it stand flat. Take a slice from the top. Remove yolks.
Mash yolks and mix your favorite deviled egg recipe -- mayonnaise, pepper, salt and dry mustard or Chinese mustard . . .
Place deviled egg filling in a pastry bag or Zip-lock bag with a jagged open star pastry tip.
Fill base with deviled egg filling. Place egg white cap on top.
Decorate face of chick with capers for eyes and carrot or radish beaks.
Serve in a bed of greens.
